How exactly this will be deployed in the UK will be determined by the partner, or select group of partners, we decide to work with, and their capabilities and ambitions. However, the commercial model behind the partnership will remain consistent in every case.

Your revenue comes directly from the restaurants you operate, and the all-day format means the business is working from opening to close, not dependent on a single peak occasion to drive the numbers. Bagels account for 45% of network sales, desserts and pastries for 35%, and coffee and drinks make up the balance. Three distinct revenue streams, running simultaneously, across every hour the restaurant is open.

The model requires no professional cooks and no extraction equipment. Products arrive ready to be finished and assembled in-store by a team that reaches full operating standard within weeks rather than months.

The result is a lean and highly streamlined operation which does not demand the capital investment, the staff costs, or the operational complexity of other F&B brands, while still delivering the product quality and brand experience of one.

Flexibility built in

Bagelstein operates successfully across a range of formats suited to different site types and trading environments.
The full café format (80–150m²) delivers the complete Bagelstein experience: full seating, the complete menu, the full coffee programme, and the brand atmosphere in its most developed form. This format is suited to high-street, shopping centre, and leisure destination environments.
The express format (30–80m²) is a compact, high-throughput model designed for travel hubs, campus environments, and locations where footfall is high and dwell time is short. The menu is focused, the service is fast, and the format works effectively in spaces where a full build-out is not possible.
The kiosk and concession format provides a minimal-footprint option for transport hubs, events, and locations where a conventional restaurant unit is not viable.
